I often struggle to find things to occupy a 2.5 year old boy for more than 30 seconds at a time. Recently I discovered Finn's love for baking mixes. In my other life, there would have been much frowning upon such food, but now not so much. Ever since I found that some of them (Krusteaz Almond poppy seeds muffins) can be made without eggs or dairy (if need be) it's become even more of an habit. When my friend with food allergies comes to visit, I know I will have at least one thing around she can eat, and she does, with enthusiasm. To make egg free muffins just use eggs replacer in the dry batter instead of a real eggs, no need to premix the powder in water first.
We always add some kind of fruit to the batter at the end, it makes the muffins moist and pretty. Finn likes to sample the dough occasionally which really freaks me out since we are all about food safety around here. Then I remember that once upon a time I was a kid too and would lick any bow of batter clean without any consequences so I let it pass.
Finn looks like such a character...good idea baking and cooking with kids..I found they also love getting their hands into bread dough...good luck..

I have a little one that is allergic to eggs too and also use the replacers, but I've just discovered recently that apple sauce makes a great substitute in cupcakes and mashed banana's in chocolate brownies plus being fruit I feel like I adding some good stuff in as well.
I'm going to try and write up some recipes soon too if that helps?
